I give you a deep-heart touching story on why it's not just about the dollar, but a more significant reason you'd never know here is our interview with the founder of The Krazy Kokonut, Krista Larsen.

 Karolina: "So why, out of all things, did you chose a health-centered food cart?" Krista:" For as long as I can remember, I have had weight problems, Larsen says, always trying to eat on the go, can't find anything but fast food with no healthy options except salads (which I'm not a massive fan of), and never enough time to prep or cook for myself seven days a week." 

The hardships that come with single parenting are down in the depths of just trying to get through, Larsen is a badass mother of four boys, and on top of motherhood, she has always worked a full-time job like most people, but for Larsen, it was far from being glamoured some laughter, some giggles & smiles but behind the scenes, she wanted help desperately and a break! Larsen stated that before opening the cart, she worked at a dealership for 12 years from selling cars to a finance manager, which meant she hardly ever performed a typical 40-hour workweek; most of the time, it was 10-12hrs a day 5-6 days a week then coming home to her kids, cleaning, running errands, grocery shopping, cooking. 

Larsen states, " I was sick and tired of always taking care of everyone else and not having the time for myself, so I decided to start creating a menu that not only I liked, but stuff that my kids would like too! Yes, there are a few things that are treats, but hey, we gotta have those available for our "good job" days"! When asked what she foresaw for The Krazy Kokonut's future, CEO Krista Larsen says, " I wanted to make food and drinks from scratch that could be easily accessible to order no matter what day or shift someone works and make it so anyone can enjoy it whether you're on a regular diet, vegetarian, or even vegan. 

If I can make a mom's life easier by helping her eat a little healthier (and her kids too), and she knows she's getting the best ingredients that are fresh and mostly local with no MSG or potentially harmful chemicals, then that alone is all the reward I need"! She adds," I want to better our community and up the standards on what customers should expect on fresh tasting food that's good for you and your family! It all starts with what we put in our bodies"! 

With that, Larsen and I have been in communication to help her in getting the recognition she not only deserves as a mother, daughter, friend, co-worker, and CEO but more awareness of her company that is just damn irresistible can't even put into words. Krista has been nothing but sweet, cooperative, and understanding.
